Mix the sugar and butter until it becomes creamy. Create a well in the middle of the flour, dust it with the ground coffee and pour the butter and sugar mixture into the middle. Now add the egg and yolk to the well and begin to stir all the ingredients together, combining them slowly. Knead until you have a uniform dough, then chill in the fridge for around an hour.
Roll out the dough on a board until you reach the desired thickness for your biscuits. Use a variety of biscuit cutters to cut out your biscuit shapes. Place them on baking paper and bake at 180°C (356°F) for around 10‒12 minutes.
