Norbert Niederkofler, a chef between mountains and stars

Norbert Niederkofler defines himself as a mountaineer even more than as a chef, having turned his own kitchen into a celebration of the mountain.

 

Three Michelin stars gathered, but with his feet firmly on the ground, on that territory which is always a source of inspiration and that has brought him to the highest peaks of Italian and international gastronomy.

“Coffee is very important in my kitchen”, he recounts in his home of Val Badia during his participation in Care's, the project that sees the protagonists of international cuisine meet to share a common, ethical and responsible vision on the topic of gastronomy.

 

“It would be simplistic to use it only in sweets; it is an ingredient able to enhance the flavours of any dish. I really like the scents of earth, its bitter taste; perfect for risottos and sauces.”

Faced with a cup of coffee, Niederkofler reiterates the importance of knowing what is behind a philosophy of cooking, a dish, an ingredient; for this reason, he chose to collaborate with Lavazza: “I know the family, it is important to see and know the face behind the producers, just as it was done in the Earth Defenders calendar, a beautiful project that has seen the growers themselves become the protagonists.”
